Ingredients

  • 1green bell pepper
  • ½lime
  • ¼ cupranch dressing
  • ¾ lbraw peeled shrimp, fresh or frozen
  • ½ mediumred onion
  • 6small flour tortillas
  • 1yellow bell pepper

Directions

  1. Heat the oven to 450°F and rinse the peppers and onion.
  2. Cut the green and yellow bell peppers into thin lengthwise strips and spread them on a sheet pan.
  3. Slice the red onion lengthwise into thin pieces and add to the sheet with the peppers.
  4. Drizzle the vegetables with oil, toss to coat, and spread in an even layer. Bake for about 5 minutes to start softening.
  5. If shrimp are frozen, thaw them briefly under cold water and pat dry; otherwise pat dry if they are fresh.
  6. Place the shrimp over the vegetables, sprinkle with Cajun seasoning and a pinch of salt, then toss to coat and distribute evenly.
  7. Return the sheet to the oven and bake until the shrimp are cooked and vegetables are tender, about 5–7 minutes more.
  8. While cooking, cut the lime into wedges and whisk the ranch dressing with additional Cajun seasoning to make the spicy ranch.
  9. Warm tortillas in a skillet, oven, or microwave if desired.
  10. Divide the shrimp and vegetables among the tortillas, drizzle with spicy ranch, and finish with a squeeze of lime.
  11. Serve with extra lime wedges if you like.

  • Prep ahead: slice peppers and onion the night before for a faster cook-time.
  • Swap: use any combination of peppers you have on hand and finish with the spicy ranch on top for extra tang.
