Directions
- Pat chicken dry and cut horizontally to form thin cutlets, then season well with salt and pepper on both sides.
- Coat the chicken by brushing with mayo, then gently press into a mixture of sesame seeds and cornstarch until evenly coated.
- Preheat a nonstick skillet over medium-high heat, then add a little oil to coat the bottom.
- Cook the chicken until the coating is golden and the chicken is cooked through, about 3–4 minutes per side, then remove from heat.
- Meanwhile, trim the cucumber, cut it into thin slices, and add to a large bowl.
- Quarter and seed the jalapeño, mince it, and add to the bowl along with minced ginger, cilantro, lime juice, and a pinch of salt; whisk to form the dressing.
- Slice the snap peas and add them to the bowl with cucumber; toss to combine with the dressing and let the flavors meld briefly before serving.
- Divide the salad onto plates and top with the sesame-coated chicken for serving.

- Finish the salad with a light drizzle of toasted sesame oil or a pinch more salt if needed before serving.
