  • ¼ (8 oz) blockmozzarella cheese
  • ½ headromaine lettuce
  • 2tomatoes
  • 1 (8 oz) cantomato sauce
  • ½ mediumyellow onion

Directions

  1. Rinse produce and pat dry; drain and rinse the black beans in a colander and let them drain.
  2. Seed and dice the bell pepper; peel and dice the onion; peel and mince the garlic.
  3. Preheat a nonstick skillet over medium-high heat and swirl in oil to coat the bottom.
  4. Add the onion, bell pepper, and garlic to the skillet; cook until softened, about 5–6 minutes.
  5. Stir in the beans, corn, tomato sauce, and spices; simmer on low for 15 minutes, stirring occasionally.
  6. Grate the mozzarella.
  7. Halve and pit the avocados; scoop the flesh into a bowl and mash slightly, then fold in the diced tomatoes and lime juice; season with salt.
  8. Separate romaine leaves from the head and use them as taco shells; fill with the bean mixture and top with guacamole and cheese; serve.

  • Serving idea: swap mozzarella for shredded cheese you have on hand, or add a squeeze of lime over each boat for extra brightness.
