  • ⅓ (8 oz) blockcheddar cheese
  • ¾ lbchicken breasts, boneless skinless
  • 4 fl ozchicken or vegetable broth
  • ⅛ cupplain Greek yogurt
  • ½ mediumyellow onion

Directions

  1. Cut the chicken into bite-sized pieces.
  2. Heat a large nonstick skillet over medium heat.
  3. Peel and dice the yellow onion.
  4. Add a thin layer of oil and swirl to coat the pan.
  5. Add the chicken, onion, paprika, salt, and pepper; cook, stirring occasionally, until the chicken is fully cooked, about 5–7 minutes.
  6. Rinse and dry the vegetables.
  7. Cut the cauliflower into quarters, trim away leaves and the thick stem, then coarsely grate or pulse in a processor and place in a large bowl; separate the broccoli into small florets and chop stems, adding them to the bowl.
  8. Add the grated cauliflower, broccoli pieces, and broth to the skillet; cover and cook until the vegetables are tender, about 5–7 minutes.
  9. Remove from heat and stir in the cheddar, yogurt, salt, and pepper until smooth and creamy; divide among bowls with the chicken and vegetables and serve.

Two tips

  • Prep the onion and vegetables earlier in the day or the night before to speed up dinner time.
  • If you have a different melting cheese on hand, you can substitute cheddar for a similar amount and melt it in with the yogurt.
