Directions
- Simmer balsamic vinegar with brown sugar in a small saucepan over medium heat until the mixture thickens and coats the back of a spoon, about 10–15 minutes; remove from heat.
- Slice the chicken horizontally to form thin fillets by cutting parallel to the cutting board.
- Combine the listed spices in a small bowl and rub the mixture evenly over both sides of each chicken fillet.
- Heat a grill pan or skillet over medium-high heat and lightly oil the surface.
- Wash and dry all produce, then prepare the bruschetta mix by dicing the tomatoes and mincing the shallots and garlic; place them in a bowl.
- Coat the hot pan with a little oil and cook the chicken fillets until golden and cooked through, about 5–6 minutes per side, then transfer off heat.

- To serve, plate the chicken, spoon the bruschetta mixture over each piece, and drizzle with the balsamic glaze; enjoy.
