Directions

  1. Simmer balsamic vinegar with brown sugar in a small saucepan over medium heat until the mixture thickens and coats the back of a spoon, about 10–15 minutes; remove from heat.
  2. Slice the chicken horizontally to form thin fillets by cutting parallel to the cutting board.
  3. Combine the listed spices in a small bowl and rub the mixture evenly over both sides of each chicken fillet.
  4. Heat a grill pan or skillet over medium-high heat and lightly oil the surface.
  5. Wash and dry all produce, then prepare the bruschetta mix by dicing the tomatoes and mincing the shallots and garlic; place them in a bowl.
  6. Coat the hot pan with a little oil and cook the chicken fillets until golden and cooked through, about 5–6 minutes per side, then transfer off heat.
  7. Preheat the oven to broil and position a rack accordingly; line a baking sheet with foil if desired.
  8. Slice the fresh mozzarella and arrange the cooked chicken on the baking sheet; layer mozzarella on top and broil for 2–3 minutes until the cheese begins to melt.
  9. Toss the diced tomatoes with shallots, garlic, torn basil, olive oil, salt, and pepper; fold in the basil ribbons and set the mixture aside to meld flavors.
  10. To serve, plate the chicken, spoon the bruschetta mixture over each piece, and drizzle with the balsamic glaze; enjoy.
