Directions

  1. Pour 4 fl oz milk into a small saucepan with a pinch of salt and heat over medium until just steaming.
  2. Stir in quick oats and a drizzle of maple syrup; reduce heat to low and simmer, stirring occasionally, for 3–5 minutes until the oats reach your desired consistency.
  3. While the oats cook, wash and halve the peaches, remove the pits, then dice them into medium pieces.
  4. Roughly chop the pecans for a rustic texture.
  5. Divide the cooked oats between two bowls.
  6. Top each bowl with the diced peaches and chopped pecans.
  7. Serve with a splash of milk on the side and an extra drizzle of maple syrup if you like, and enjoy.

Two tips

  • Prep the peaches and pecans in advance and store in the fridge to speed up weeknight bowls.
  • If you want a different crunch, swap pecans for walnuts from your pantry.
