  • ½ small bunchfresh dill
  • ½ bunchkale
  • 1lemon
  • ½ medium headnapa cabbage
  • lemons

Directions

  1. Preheat the oven to 450°F.
  2. In a baking dish, whisk together oil, maple syrup, Dijon mustard, salt, and pepper to make a marinade.
  3. Pat the chicken dry with paper towels, place in the dish, and turn to coat with the marinade.
  4. Bake the chicken, turning halfway through, until cooked through and the internal temperature reaches a safe level, about 25–30 minutes; remove from the oven when done.
  5. While the chicken cooks, rinse and dry the vegetables and herbs.
  6. Zest the lemon and squeeze its juice into a medium bowl. Add oil, salt, and pepper, then whisk to make a dressing.
  7. Rinse kale, remove tough stems, chop into thin ribbons, and add to the bowl with the dressing.
  8. Halve the cabbage, thinly slice, and add to the bowl.
  9. With your hands, massage the greens with the dressing until they wilt, about 1–2 minutes.
  10. Shave the dill leaves from the stems, chop roughly, and fold into the slaw.
  11. To serve, divide the chicken and the slaw between plates and enjoy.

Two tips

  • Prepare the slaw ahead by washing and chopping the kale and cabbage; keep the dressing separate until ready to serve.
  • Leftover chicken and slaw can be stored separately in the fridge for up to 2 days; reheat the chicken in a hot pan or oven.
