Ingredients

  • ½ pintgrape tomatoes
  • 1green bell pepper
  • ¾ lblean ground beef
  • ½lemon
  • green bell peppers

Directions

  1. Rinse and dry all produce, then prep the produce as needed for the salad and wraps.
  2. Zest half a lemon into a small bowl, then squeeze in its juice. Stir in mayonnaise and paprika, along with a pinch of salt and pepper; whisk until smooth and set aside as aioli.
  3. Pour the remaining lemon juice into a separate bowl and whisk in olive oil with a pinch of salt and pepper to make a simple dressing; set aside.
  4. Shape the ground beef into two even patties, season with salt and pepper, and set on a plate.
  5. Heat a grill pan or skillet over medium-high heat and lightly coat with oil.
  6. Cook the patties without moving for about 3 minutes, then flip and cook 2–3 minutes more until they reach your preferred doneness; transfer to a clean plate.
  7. Slice the bell peppers into thin strips and halve the grape tomatoes; add them to the salad bowl along with torn lettuce pieces and the reserved dressing; toss to coat the greens.
  8. Assemble each wrap by placing two lettuce leaves on a plate, adding a burger patty, and spooning aioli over the top; serve with the dressed greens on the side.
  9. Plate the wraps and greens together for serving and enjoy.

Two tips

  • Prep the aioli and salad dressing ahead and keep them refrigerated for a quicker assembly at mealtime.
  • Swap the beef for a lean turkey patty or use extra greens inside the wraps for a lighter option.
