Ingredients

  • 2pork sausages
  • 1red bell pepper
  • ½ (8 oz) cantomato sauce
  • 2whole grain buns or rolls
  • ½ mediumyellow onion

Directions

  1. Preheat the oven to 425°F. Place the sausages on a baking sheet and bake for 8–10 minutes while you start the vegetables.
  2. Wash and dry the bell peppers. Seed and slice them into thin strips and transfer to a medium bowl.
  3. Peel and mince the garlic and peel and thinly slice the onion into half rings; add both to the bowl with the peppers.
  4. Drizzle with oil, sprinkle with salt and Italian seasoning, and toss the vegetables to coat.
  5. Remove the baking sheet from the oven, flip the sausages, and push them to one side. Add the pepper-onion-garlic mixture to the sheet and return to the oven until the vegetables are tender and the sausages are cooked through, about 15 minutes.
  6. Pour the tomato sauce into the bowl used for the vegetables and stir in additional spices to blend the flavors; set this sauce aside.
  7. Grate the mozzarella cheese.
  8. When the sausages and vegetables are done, move the pan from the oven and turn the heat to broil high.
  9. Split the rolls in half and place them cut-side up on another baking sheet. Broil briefly, about 1–2 minutes, until lightly toasted.
  10. Slice the sausages crosswise in half. Keep the roll bottoms on the sheet and top them with half the cheese. Layer the vegetables, sauce, and sausages, then finish with the remaining cheese. Broil just until the cheese melts, about 1 minute.
  11. Close the sandwiches and divide them onto plates. Enjoy the meal.

Two tips

  • Prep ahead by chopping peppers, onion, and garlic the night before and refrigerating until ready to cook.
  • If you have extra cheese or prefer a different melt, use a small amount of mozzarella on top of the fillings and toast under the broiler for a minute longer before serving.
