Directions
- Dice the ham and set it aside in a small bowl.
- Heat an ovenproof skillet over medium-high heat until hot.
- While the skillet heats, dice the red onion.
- Add oil to the skillet and coat the bottom, then add onion and broccoli; cook, stirring occasionally, until softened, about 4–5 minutes.
- Drain excess liquid from the cottage cheese, then whisk it with the eggs and spices in a medium bowl until smooth.
- When the broccoli is tender, reduce heat to medium-low and pour the egg mixture over it. Gently lift the edges so the uncooked egg can flow underneath; cook until the bottom and sides are set but the top remains runny, about 3–5 minutes.
- Preheat the oven to broil on high and position the rack in the upper third. Sprinkle the ham and shredded cheese over the frittata, then place the skillet under the broiler until the top is set and the cheese melts, about 3–4 minutes. Let the frittata rest for about 5 minutes before slicing.
- Cut the frittata into wedges and divide between plates.
