Directions

  1. 1. Wash all produce, trim the green beans, and cut them into 1/2-inch pieces; dice the peppers and onions, and mince the garlic; set green onions aside for garnish.
  2. 2. Heat a medium saucepan over medium-high heat, then add a little virgin coconut oil and swirl to coat the bottom.
  3. 3. Add the ground beef to the pan and cook, breaking it apart with a spoon, until browned and crumbly; transfer to a plate, leaving the rendered juices behind.
  4. 4. In the same pan, add the onions, peppers, green beans, and minced garlic; cook, stirring frequently, until the vegetables soften, about 5–7 minutes.
  5. 5. Return the beef to the pan and season with chili powder, salt, and black pepper; mix well to combine everything.
  6. 6. Stir in the diced tomatoes; bring to a boil, then reduce the heat and simmer for 5–10 minutes to meld the flavors.
  7. 7. Spoon the chili into bowls, top with dollops of yogurt, and scatter the green onions over the top before serving.

Two tips

  • Prep in advance by chopping peppers, onions, and green onions earlier in the day for faster assembly.
  • If you don’t have yogurt, you can skip the topping or use a small dollop of sour cream as an alternative.
