  • ¼ cuppeanuts, roasted unsalted
  • English cucumbers

Directions

  1. Whisk lime zest and juice with grated ginger, and add fish sauce, maple syrup, chili-garlic sauce, salt, and pepper to form a dressing.
  2. Toss the chicken with half of the dressing to coat; reserve the remaining dressing for the salad.
  3. Heat a skillet over medium-high and swirl in a little oil to coat the bottom.
  4. Add the chicken and cook until browned and cooked through, about 4–6 minutes per side, then discard any remaining marinade.
  5. Loosen the remaining dressing with a touch of olive oil and set aside for the salad.
  6. Quarter the peaches lengthwise, twist to separate from the pit, remove the pit, and cut each quarter into thin wedges; add to the salad bowl.
  7. Trim the ends of the cucumbers, halve lengthwise, and thinly slice into half rounds; add to the salad bowl.
  8. Stem and tear fresh mint leaves, roughly chop the peanuts, and add everything to the salad bowl; toss to coat with dressing.
  9. Divide the chicken and salad between plates and serve.

Two tips

  • Prep the salad components ahead: keep peaches sliced and cucumbers ready in the fridge for faster assembly.
  • Swap in additional chopped peanuts or use any remaining cucumber to vary the crunch in a light lettuce wrap if desired.
