Ingredients

  • ½ (18 oz) bagbroccoli florets
  • 1 (10 oz) bagcauliflower florets
  • 22 ½ mlmiso paste, white
  • ¾ lbribeye steak
  • ½shallot
  • shallots

From the pantry: black pepper, brown sugar, chili-garlic sauce, garlic powder, salt, sesame seeds, toasted sesame oil

Cookware

aluminum foil · chef's knife · colander · cutting board · grill pan, outdoor grill, or skillet · measuring spoons · medium saucepan · mixing bowls · stirring spoon · tongs

Directions

  1. Preheat a grill pan, outdoor grill, or skillet over medium-high heat.
  2. Pat the steak dry with paper towels and season both sides with salt and pepper.
  3. When the pan is hot, add a light coating of oil and cook the steak 2–5 minutes per side, then transfer to a plate and loosely cover with foil to rest for 5 minutes.
  4. In a medium saucepan, bring about 2 inches of water to a boil, then reduce to a simmer.
  5. Mince the shallot and mix it with miso paste, chili-garlic sauce, oil, sesame seeds, brown sugar, and garlic powder to form the spicy miso sauce; set aside.
  6. Add the cauliflower and broccoli to the simmering water, cover, and steam until fork-tender, about 5–6 minutes.
  7. Drain the vegetables and return them to the pan. Drizzle with oil, sprinkle with sesame seeds, and season with salt and pepper; toss to coat.
  8. Thinly slice the rested steak against the grain.
  9. Divide steak and vegetables between plates and drizzle the spicy miso sauce over the steak. Serve immediately.

Two tips

  • Prep ahead by washing and cutting the broccoli and cauliflower early in the day for faster assembly.
  • If you want less heat, start with half the chili-garlic sauce and adjust to taste with more later.
