Ingredients

  • 1 crownbroccoli
  • ¾ lbchicken breasts, boneless skinless
  • ½ small bunchcilantro
  • 1 clovegarlic
  • 2limes
  • 1red bell pepper
  • ½ mediumyellow onion
  • red bell peppers
  • yellow onions

From the pantry: extra virgin olive oil, honey, natural peanut butter, soy sauce, Worcestershire sauce

Directions

  1. Wash and dry all produce.
  2. Mince the garlic and place it in a large bowl. Juice one lime into the bowl.
  3. Whisk in oil, peanut butter, soy sauce, honey, and Worcestershire; set aside half of the mixture in a small container.
  4. Split the chicken horizontally to form thin fillets and add to the bowl with the marinade; toss to coat and set aside.
  5. Break the broccoli into florets and cut the stems into smaller pieces.
  6. Seed and slice the bell pepper into thin strips.
  7. Preheat a grill pan or skillet over medium heat, then lightly oil the surface.
  8. Add the broccoli and pepper strips to the pan and cook, stirring occasionally, until just tender; transfer to a plate and cover with foil.
  9. Slice the onion into thick rings and cook in the pan until they soften and develop grill marks; transfer to the plate with the vegetables and cover with foil.
  10. Oil the pan again and cook the marinated chicken, turning once, until cooked through and golden.
  11. Shave cilantro leaves from the stems and mince the leaves; cut the remaining lime into wedges.
  12. Divide the plated chicken and vegetables, garnish with cilantro and lime wedges, and serve with the reserved marinade for dipping.

Two tips

  • Prep ahead by tossing the chicken with half of the marinade in the morning and refrigerating.
  • Serve leftovers over brown rice or with warm tortillas for a quick lunch, or mix in a spoonful of peanut butter into the reserved sauce to thicken slightly.
