  • 1red bell pepper
  • ½ lbwhite mushrooms
  • ½ mediumyellow onion
  • green bell peppers
  • red bell peppers
  • yellow onions

Directions

  1. Whisk together minced ginger, minced garlic, soy sauce, vinegar, and honey to make a bright glaze.
  2. Slice the chicken horizontally into thin fillets and arrange them in a baking dish. Pour half the glaze over the chicken and toss to coat; reserve the remaining glaze for later.
  3. Bake in a 400°F oven until the chicken is almost cooked through, about 15–18 minutes.
  4. While the chicken cooks, cook the bacon in a skillet until crispy; transfer to a paper-towel plate and keep the drippings in the skillet.
  5. On a clean board, trim and thinly slice the bell peppers, then add them to a bowl with the mushrooms and the onion.
  6. Return the skillet to medium heat and cook the vegetables, stirring occasionally, until they are softened, about 6–7 minutes.
  7. Thinly slice the mozzarella cheese.
  8. When the chicken is near done, remove it from the oven and switch the oven to broil on high.
  9. Layer the chicken with the bacon and cheese, then return the dish to the oven and broil until the cheese melts and the chicken finishes cooking, about 5 minutes.
  10. Add the remaining glaze to the skillet with the veggies and cook briefly until heated through, 1–2 minutes, then remove from heat and spoon over the chicken and vegetables for serving.

Two tips

  • Make the glaze up to a day ahead and keep it refrigerated for faster assembly.
  • If you prefer, omit the bacon or mushrooms and still bake the dish with the same timing and temp.
