  • ¾ lbchicken breasts, boneless skinless

  • ¼ cuphoney mustard dressing
  • ⅓ cupParmesan cheese, shredded

From the pantry: extra virgin olive oil, garlic powder, mayonnaise, panko bread crumbs, paprika, salt

Cookware

baking sheet pan · chef's knife · colander · cutting board · measuring cups · measuring spoons · mixing bowls · nonstick skillet · oven mitts · stirring spoon · tongs

Directions

  1. Preheat the oven to 450°F and lightly oil a baking sheet.
  2. In a small bowl, combine the mayo with garlic powder and salt.
  3. In a separate bowl, mix the Parmesan, bread crumbs, and paprika.
  4. Pat the chicken dry and cut into ¾-inch tenders; toss them in the mayo mixture to coat.
  5. Dredge the coated tenders in the breadcrumb mixture in batches, pressing to help the coating stick, then lay them on the prepared sheet.
  6. Bake until the coating turns golden, about 10 minutes.
  7. While the chicken bakes, wash and trim the green beans (keep them ready on a clean cutting board).
  8. Turn the chicken tenders over and continue baking until cooked through, about 6–8 minutes more.
  9. Place a skillet over medium-high heat and let it heat up.
  10. Add oil to the skillet, swirl to coat, then add the green beans with a pinch of salt; cook, stirring occasionally, until tender-crisp, about 4–5 minutes.
  11. Plate the chicken tenders with the green beans and serve with the honey mustard dressing on the side.

Two tips

  • Coat the chicken and refrigerate for up to 2 hours before baking to speed weeknight prep.
  • Serve extra honey mustard dressing on the side as a dipping option.
