Directions

  1. Preheat the oven to 500°F and line a baking dish with foil.
  2. Mince or press the garlic and transfer it to a medium bowl.
  3. Add lime juice, olive oil, paprika, salt, and pepper to the garlic and whisk to combine.
  4. Toss the chicken drumsticks in the garlic-paprika mixture until they are evenly coated, then arrange them in the prepared baking dish.
  5. Roast the chicken, turning halfway through, until cooked through and browned, about 25–30 minutes.
  6. In a small bowl, whisk lime juice, olive oil, Dijon mustard, salt, and pepper to make the dressing.
  7. Rinse and dry the mixed greens, halve the grape tomatoes, and halve and pit the avocado; scoop and dice the flesh.
  8. To serve, spread greens on plates, top with tomatoes and avocado, drizzle with the dressing, and place the chicken drumsticks on the side.

Two tips

  • Prep ahead: mix the dressing and garlic-paprika coating a day in advance and refrigerate.
  • Serving idea: toss the greens with a little extra lime juice and olive oil if you have them on hand, or serve with an extra avocado half for more creaminess.
