- 4 sliceswhole grain bread

Directions
- Preheat the broiler to high and position the rack close to the heat. Place prosciutto in a single layer on a baking sheet and broil until crisp, 2–3 minutes.
- Wash and dry all produce. Slice mozzarella into rounds and cut peaches into thin wedges; place the wedges on a plate.
- Thinly slice the tomato and season with salt and pepper; add to the plate with the peaches.
- Spread mayonnaise on each slice of bread and set aside.
- Layer lettuce on half of the bread, then add tomato, mozzarella, peach wedges, and crispy prosciutto. Top with the remaining bread slices to complete the sandwiches.
- In a bowl, toss chopped artichokes with the remaining lettuce and the Italian dressing to form a simple salad.
- Optional: toast the bread if you prefer extra crunch. Serve the sandwiches with the salad on the side or plated together.
- Divide the salad and the sandwiches between plates and enjoy.
