Ingredients
- 1 (14.5 oz) candiced tomatoes
- 2flatbreads or naan
- 1 (15 oz) cangarbanzo beans (chickpeas)
- 1 (1 inch) pieceginger root
- ½ (10 oz) bagkale, cut and ready to use
- ¼ cupplain Greek yogurt

Directions
- Open and rinse the chickpeas, then drain them well.
- Warm a medium saucepan over medium heat.
- Wash and finely mince the ginger so it releases its aroma.
- When the pan is hot, add the coconut oil and swirl to coat the surface; stir in the ginger and spices and cook, stirring constantly, until fragrant, about 1 minute.
- Pour in the chickpeas and tomatoes along with a splash of water; bring to a simmer and then reduce the heat to low, cooking until the chickpeas begin to soften, about 5 minutes.
- Add kale in handfuls, waiting for each batch to wilt before adding the next; keep simmering on low and cook until both chickpeas and kale are tender, about 5 more minutes.
- While the curry finishes, toast the naan if desired and cut it into wedges.
- Ladle the curry into bowls, top with yogurt, and serve with naan on the side.
Two tips
- Prep ahead: Rinse and drain the chickpeas and mince the ginger up to a day ahead and refrigerate separately.
- Serving idea: Warm the naan and cut into wedges for dipping, and finish with a dollop of yogurt if you like.
