  • ¾ lbchicken breasts, boneless skinless
  • 8 fl ozchicken or vegetable broth
  • ½ small pkgfresh basil
  • 2 clovesgarlic
  • ½ pintgrape tomatoes
  • ¼ (8 oz) blockmozzarella cheese
  • 1 ozParmesan cheese
  • 2 slicesprosciutto
  • 3 tbsptomato paste

Directions

  1. Preheat the oven to 425°F and lightly oil a baking sheet.
  2. In a small bowl, combine Parmesan, almond meal, and Italian seasoning and mix well.
  3. Pat the chicken dry, then slice it horizontally to form thin cutlets.
  4. Spread mayo on both sides of each cutlet, then press into the parmesan mixture to coat. Transfer to the prepared baking sheet.
  5. Bake until the chicken is cooked through and lightly browned, about 10–12 minutes.
  6. Mince the garlic on a clean board. In an ovenproof skillet, whisk together garlic, broth, tomato paste, oil, and spices and bring to a simmer over medium-high heat.
  7. Halve the grape tomatoes and wash the basil leaves; pick and roughly chop the basil, reserving a few leaves for garnish.
  8. Chop the prosciutto and mozzarella into bite-sized pieces, then add the tomatoes and basil to the skillet. Place the chicken on top and scatter with prosciutto and mozzarella. Broil until the cheese is bubbly and lightly golden, about 5 minutes, watching closely.
  9. Serve the chicken with the pan sauce, garnishing with the remaining basil leaves.

  • Make ahead: the breading mix and tomato sauce can be prepared up to a day ahead and kept in the fridge.
  • Serving idea: swap the basil with a pinch of dried Italian seasoning and a drizzle of olive oil for a quicker finish.
