Directions
- Preheat the oven to broil on high with the rack positioned near the top. Line a baking sheet and set aside.
- Wash all produce, then cut the broccoli into florets and small stems; place them in a large bowl. Add oil, salt, and pepper, toss, then spread in a single layer on the sheet.
- Broil the broccoli, turning halfway through, until edges are crisp and lightly charred and the pieces are tender, about 12–15 minutes.
- In the large bowl, zest the lime, then juice half of it; set the remaining lime aside for serving. Peel and mince the shallot and garlic, and grate or mince the ginger; add these aromatics to the lime juice.
- Whisk in fish sauce, soy sauce, chili-garlic sauce, and a touch of sugar to make a sauce.
- When the broccoli finishes, transfer it to the bowl with the sauce and toss to coat.
- Toss chicken with cornstarch, salt, and pepper in a medium bowl to coat. Heat a nonstick skillet over medium-high heat, add oil, then cook the chicken until golden and nearly cooked through, about 5–6 minutes.
- Shave cilantro leaves into the broccoli bowl and mix them in. Add edamame to the skillet and cook until both chicken and edamame are cooked through, 2–3 minutes, then scrape juices into the bowl and toss.
- Divide the broccoli mixture between bowls, top with almonds, and garnish with lime wedges before serving.
