Directions
- 1) In a small saucepan, bring water and a pinch of salt to a boil.
- 2) Wash, trim, and peel the carrots, then coarsely grate them.
- 3) Roughly chop the dates.
- 4) When the water boils, add the carrots, dates, oats, and the ground spices. Reduce heat to low, cover, and simmer, stirring occasionally, until the oats reach your preferred thickness (about 3–5 minutes).
- 5) Roughly chop the walnuts while the oats cook.
- 6) Spoon the oatmeal into bowls, top with the chopped walnuts, and sprinkle with brown sugar. Serve with milk on the side and enjoy.
