Ingredients

Directions

  1. Heat a grill pan, outdoor grill, or skillet over medium heat.
  2. Whisk together cumin, coriander, paprika, oregano, salt, and pepper to form the Cajun rub.
  3. Split the chicken breasts horizontally to create thin fillets, then rub all sides with the spice mix.
  4. Lightly oil the cooking surface and cook the chicken fillets until golden and cooked through, about 2–3 minutes per side.
  5. In a bowl, whisk together oil, vinegar, Dijon mustard, salt, and pepper to make the dressing.
  6. Wash and dry the spinach, reserve a small handful for the burgers, then toss the rest with the dressing.
  7. Wash and slice the tomato into rounds; halve and pit the avocado, then slice while still in the skin and scoop out.
  8. Toast the buns on the grill or in the skillet until lightly browned.
  9. Spread Dijon on the buns, layer with the remaining spinach, top with chicken, tomato, and avocado, and serve with the spinach salad on the side.

Two tips

  • Plan ahead by mixing the Cajun rub and dressing a day ahead; store in the fridge for faster assembly.
  • If you want a serving variation, place extra avocado slices on the side for dipping or topping the burgers.
