Ingredients

  • 1 (5 oz) pkgbaby spinach
  • ½ small pkgfresh basil
  • 2 clovesgarlic
  • 1 (1 inch) pieceginger root
  • ½lime
  • 3pork sausages
  • 5 ozspaghetti pasta
  • limes

From the pantry: black pepper, fish sauce, salt, virgin coconut oil

Directions

  1. 1. Bring a large pot of salted water to a boil and cook the spaghetti until al dente, then drain and set aside.
  2. 2. Peel and finely chop the garlic; peel and grate the ginger.
  3. 3. Place a skillet over medium-high heat and swirl in virgin coconut oil until it shines.
  4. 4. Open the sausage and squeeze the meat into the skillet, breaking it apart as it cooks; cook until browned and crumbly, about 4–5 minutes, then push to one side.
  5. 5. Juice the lime into a small bowl and pick the basil leaves from the stems.
  6. 6. Lower the heat to near low and add the spinach and half the basil; stir until the spinach wilts.
  7. 7. Return the pasta to the pan, then stir in the lime juice, fish sauce, salt, and pepper; toss until everything is evenly coated and heated through.
  8. 8. Divide between bowls and scatter the remaining basil on top before serving.

Two tips

  • Prep ahead: wash and dry the greens and grate the ginger (and garlic) earlier to speed up finishing touches.
  • Swap idea: if you don’t have fish sauce, a splash of soy sauce can be used as a quick substitute.
