Chicken Caesar Wrap Box

A sturdy, no-soggy-lettuce lunch box built from Sunday's rotisserie chicken: half the Caesar kit gets tossed with the chicken and rolled tight in a tortilla, while the rest of the salad rides along on the side for crunch. It's a fast, protein-packed wrap that tastes like it took more effort than it did.

Ingredients

  • 3/4 cupcooked rotisserie chicken, shredded
  • 1/2 packageCaesar salad kit (lettuce, dressing, croutons, cheese)
  • 1 tortillaflour tortilla, large

From the pantry: black pepper, salt

Cookware

cutting board · chef's knife · large bowl · meal-prep container

Directions

  1. If starting from scratch, pull the meat off a warm rotisserie chicken and shred one of the five piles into bite-size pieces (about 3/4 cup per serving); skip this step if using Sunday's pre-shredded pile.
  2. Open the Caesar salad kit and separate the lettuce, croutons, shaved cheese, and dressing into two roughly equal portions.
  3. In a large bowl, toss the shredded chicken with half the dressing, half the croutons, and half the shaved cheese until evenly coated.
  4. Lay a tortilla flat on a cutting board and scatter about half of the remaining chopped lettuce down the center, leaving a border on all sides.
  5. Spoon the chicken Caesar mixture over the lettuce in a tight line just off-center.
  6. Fold the bottom of the tortilla up over the filling, then fold in both sides and roll tightly away from you into a compact wrap.
  7. Slice the wrap in half on a diagonal and pack it in a meal-prep container.
  8. Pack the remaining lettuce, croutons, shaved cheese, and dressing separately in a small container to eat on the side.

Two tips

  • Keep the reserved Caesar dressing in its own small container and add it right before eating so the side salad doesn't wilt in the fridge.
  • No time to shred chicken fresh? Grab one of the five piles from Sunday's prep chicken and this comes together in under 5 minutes.

Packing

Pack the sliced wrap in one compartment of the meal-prep container and keep the extra Caesar salad components in a separate small container or bag. Eat cold, or give the wrap 30 seconds in the microwave if you prefer it warm; dress the side salad just before eating.

Storage

Keeps well in the fridge for up to 3 days. Freezing is not recommended since the lettuce and dressing won't hold up after thawing.
