This bowl takes the buffalo chicken pile from Sunday's prep and turns it into a cool, tangy, high-protein lunch. Warm buffalo chicken sits over jasmine rice with a cold scoop of cottage cheese and crisp celery for crunch, giving you heat, creaminess, and freshness in one box.

Ingredients

  • 1 cupcooked rotisserie chicken, shredded
  • 3 tbspbuffalo wing sauce
  • 3/4 cupjasmine rice, cooked
  • 1/2 cupcottage cheese
  • 1/2 cupcelery, sliced

From the pantry: olive oil, salt, black pepper

Cookware

cutting board · chef's knife · mixing bowl · meal-prep container · measuring cups · measuring spoons

Directions

  1. If starting from scratch, warm 1 cup shredded rotisserie chicken in a skillet over medium heat for 2 minutes, then toss with buffalo wing sauce until evenly coated; if using Sunday's prepped buffalo chicken pile, just reheat it.
  2. Wash and slice the celery into thin half-moons on a cutting board.
  3. Warm the cooked jasmine rice in the microwave for 1 to 2 minutes, then season lightly with a pinch of salt and pepper.
  4. Spoon the warm rice into the bottom of the meal-prep container.
  5. Top the rice with the buffalo chicken, spreading it evenly over the rice.
  6. Add a scoop of cottage cheese to one side of the container, keeping it separate from the hot chicken so it stays cool and firm.
  7. Scatter the sliced celery over the top for crunch, drizzle with a drizzle of olive oil, and close the lid to pack.

Two tips

  • Swap the cottage cheese for plain Greek yogurt if you want an even tangier, higher-protein version.
  • Make a double batch of buffalo chicken on Sunday so this bowl comes together in under 10 minutes on Wednesday morning.

Packing

Pack the rice and buffalo chicken together while warm, but add the cottage cheese in a small separate compartment or container so it doesn't get watery from the heat; add celery on top just before sealing so it stays crisp. Reheat the rice and chicken portion in the microwave for 1 to 2 minutes and keep the cottage cheese cold until ready to eat.

Storage

Keeps well in the fridge for up to 4 days in a sealed container. Freezing is not recommended because the cottage cheese and celery both lose texture when thawed.
