Ingredients

  • 3/4 cupcottage cheese
  • 1/2 cucumberEnglish cucumber, sliced into sticks
  • 10 crackerswhole grain crackers
  • 1 cupred seedless grapes

From the pantry: everything bagel seasoning

Cookware

cutting board · chef's knife · meal-prep container with compartments · small lidded container

Directions

  1. Spoon the cottage cheese into a small lidded container and stir in the everything bagel seasoning until evenly combined.
  2. Slice the cucumber into sticks on a cutting board (skip this if you pre-cut it during Sunday prep).
  3. Rinse the grapes and pat them dry.
  4. Portion the crackers into a small section of the meal-prep container.
  5. Arrange the cucumber sticks, crackers, and grapes in the separate compartments of the meal-prep container.
  6. Nestle the container of seasoned cottage cheese into the remaining compartment or place it alongside as the dip.
  7. Seal everything and refrigerate; eat cold, dipping the cucumber and crackers into the cottage cheese as you go.

Two tips

  • Swap the crackers for whole grain pretzels or a small toasted pita if you want more crunch variety.
  • Whip the cottage cheese with a fork or blend it briefly for a smoother, creamier dip texture.

Packing

Keep the seasoned cottage cheese in its own small lidded container so it doesn't make the crackers soggy, and pack the cucumber, crackers, and grapes in separate sections of a divided meal-prep container. Everything is eaten cold, no reheating needed, and it stays fresh in the fridge for up to 4 days.

Storage

Store assembled in the fridge for up to 4 days; keep crackers separate until ready to eat if packing more than a day ahead. Not suitable for freezing since cottage cheese and cucumber both lose texture when thawed.
