Ingredients

  • 3/4 cup (about 4 oz)cooked rotisserie chicken, shredded
  • 3 tbspbuffalo wing sauce
  • 1 tortilla (10-inch)flour tortillas
  • 1 cupromaine hearts, shredded
  • 2 tbspranch dressing
  • 2 stalkscelery, cut into sticks

From the pantry: olive oil, salt, black pepper

Cookware

cutting board · chef's knife · mixing bowl · meal-prep container · small container with lid

Directions

  1. If starting from scratch, warm the shredded chicken in a skillet with the olive oil over medium heat for 2 minutes; if using Sunday's prepped chicken, skip straight to tossing it with sauce.
  2. Add the buffalo wing sauce to the chicken and stir until fully coated, then season with a pinch of salt and pepper.
  3. Warm the tortilla for 15 seconds in the microwave so it folds without cracking.
  4. Lay the tortilla flat and spread the shredded romaine down the center, leaving a 2-inch border on each side.
  5. Spoon the buffalo chicken over the romaine, then drizzle with half the ranch dressing.
  6. Fold in the sides of the tortilla, then roll tightly from the bottom into a wrap.
  7. Slice the wrap in half on a diagonal and pack it into the meal-prep container.
  8. Pack the celery sticks alongside the wrap and the remaining ranch dressing in a small lidded container for dipping.

Two tips

  • Swap the flour tortilla for a low-carb or whole wheat version if you want fewer carbs without losing the wrap format.
  • Assemble the wrap the night before and wrap it tightly in foil or plastic wrap so the tortilla stays crisp until lunch.

Packing

Pack the sliced wrap in the main compartment, keep the celery sticks and extra ranch in a separate small container so nothing gets soggy, and eat cold or give the wrap a quick 20-second microwave if you prefer it warm.

Storage

Keeps well refrigerated for up to 3 days; the wrap does not freeze well due to the fresh romaine, but the buffalo chicken alone can be frozen for up to 2 months and assembled fresh later.
